As it matures for a full year, Old Palai undergoes a complete transformation. It reveals a rich, almost golden interior and distinctive visible crystallization - those tiny, crunchy protein bits that are the hallmark of a high-quality aged cheese.
Aroma: Much more intense and sharp, sharing a similar aromatic profile to a fine Parmesan.
Old palai works well sprinkled over your pasta or pizza.
